One of my favorite quotes is “when live gives you lemons, make lemonade”. This is a prime example of that.

Slave owners wanted to feed our people the cheapest thing they could find just to “keep us alive” as their slaves and what did our people do? We Turned grapes into wine.

Saltfish is not only served with provisions such as green bananas and boiled/fried dumplings, The most common pairing is ackee.  I personally am not crazy about it but it is actually Jamaica’s NATIONAL FRUIT.

With that being said, Ackee originally from West Africa, but has been in Jamaica since the 18th century and is now found everywhere throughout the island.
